SWEET POTATO SOUFFLE

Ingredients
4 Medium sweet potatoes
1 Tablespoon ground coriander
2 teaspoons vanilla
1/4 Cup soy or nut milk
2 Tablespoons honey
1 Tablespoon light molasses
1/2 Cup chopped walnuts
Directions:
Bake, cool, peel and mash sweet potatoes.
A food processor works well.
Add remaining ingredients except walnuts and mix well.
Spoon into casserole dish and top with chopped walnuts.
Bake at 350 degrees for 30 minutes.
